Lion's Mane
Hericium erinaceus
Mild, sweet, and distinctly savory with a delicate seafood quality compared to lobster or crab. Pan-searing develops a rich, nutty, buttery depth.
Pan-seared "crab cakes", thick-cut mushroom steaks, pulled faux pork, and golden sautés with garlic butter.
Tear into bite-sized clusters rather than slicing. Dry-sauté first over medium heat to release natural moisture before adding butter or cooking oil.
Store in a brown paper bag in the main refrigerator compartment (36–38°F). Keeps prime for 7 to 10 days. Never store in sealed plastic.

What it is: Heavy-yielding countertop setup packed with aggressive mycelium. Delivers flush after flush with zero mess. Mist daily and pick directly off the bucket wall.
Growing Instructions
- 1
Fruiting spot: Place indoors in indirect light (kitchen counter or shelf) away from direct sun and heating vents.
- 2
Remove tape: Peel tape covering pre-drilled holes to introduce fresh oxygen to the substrate.
- 3
Mist daily: Spray holes 3–4 times daily with clean water. Maintain humidity without waterlogging. Pins appear in 5–10 days.
- 4
Harvest: When cap edges flatten, grasp base of cluster, twist gently, and pull cleanly off bucket.
- 5
Recharge for Round 2: Submerge inner block in cool water for 2–4 hours, drain completely, seal lid, and resume misting.
What it is: Compact desktop block ready to fruit. The perfect hands-on introduction to mycology for families, classrooms, or curious beginners.
Growing Instructions
- 1
Cold shock: Refrigerate the sealed block for 12–24 hours to signal seasonal change and trigger fruiting.
- 2
Cut an 'X': With clean scissors, cut a 1-inch "X" into the front of the bag for fresh oxygen exchange.
- 3
Position: Keep indoors in a dim area away from drafts (AC vents or fans). Light gives pins direction to grow.
- 4
Mist lightly: Pump spritzer 3–4 times daily over cut. Pins form in 1–2 weeks and double in size daily.
- 5
Harvest: Gently twist and pull cluster at base as caps begin to unfurl. Continue misting for flush 2.
What it is: Colonized organic blocks with stored mycelial energy. They balance soil moisture, fruit outdoors, and break down into rich organic humus for garden plants.
Growing Instructions
- 1
Find shade: Choose a damp, shaded area beneath perennials, vegetable plantings, or garden trees.
- 2
Unwrap: Strip away plastic bag entirely, keeping the bare mycelium block intact.
- 3
Bury or cover: Dig a shallow hole so block sits 1 inch below ground level, or set on bare soil and mound mulch around it.
- 4
Mulch & water: Cover with 2 inches of straw, dead leaves, or wood chips. Water until damp. Heavy rain triggers massive flushes!
What it is: The ultimate garden companion. King Stropharia mycelium aggressively breaks down straw, enriches soil life, and yields robust, burgundy-capped mushrooms.
Growing Instructions
- 1
Prepare site & straw: Select a 3×3 ft shaded patch. Thoroughly hydrate clean straw or wood shavings until damp like a wrung sponge.
- 2
Crumble spawn: Massage bag before opening, breaking block into gravel-sized pieces.
- 3
Layer like lasagna: Lay 2–3 inches wet straw on bare soil. Scatter half spawn. Add 2 inches straw, scatter remaining spawn, and top with 2-inch straw layer.
- 4
Keep damp: Water lightly during dry stretches. Beds colonize over several weeks and fruit each spring and autumn following rain.
What it is: Used to inoculate fresh hardwood logs. Produces firm, dense mushrooms with deep forest flavor that fruit year after year.
Growing Instructions
- 1
Source fresh hardwood: Oak, Sugar Maple, or Beech (3–4 ft long, 3–6 in diameter) cut within the past month. Avoid rot or conifers.
- 2
Drill diamond pattern: With a 5/16" bit, drill 1.5 in deep holes spaced 4–6 in down the length and 2 in around circumference.
- 3
Hammer & seal: Tap dowels flush into holes with a mallet. Melt wax and daub over holes and log cut ends.
- 4
Rest in shade: Store off the ground in deep shade. Fruits in 6–12 months and produces for years (~1 yr per inch diameter).

Lion's Mane
Hericium erinaceus
Starts as white "popcorn" nodules, expands into cauliflower-like clusters, and elongates into hanging spines (teeth).
Harvest when spines reach approximately ¼ inch long. Pick before teeth turn yellow or brown at tips.
Reach underneath mass with both hands. Feel for dense core at container opening and lift upward to pop cleanly free.
No woody stem. Slice away any sawdust substrate clinging to base, then pull cluster apart into cooking chunks.
Grower's Diagnostic Guide
Click any symptom below for the root cause, immediate fix, and recovery steps.
Cause: High CO2 buildup from stagnant air. Mushrooms reach upward searching for oxygen.
The Fix: Move kit out of enclosed closets or cupboards to a room with gentle ambient airflow.
